Cowboy Nachos Recipe
Let me tell you something about nachos….everyone, and I mean EVERYONE goes crazy for them. It’s a win-win situation. And THESE nachos are a little something different! We jazz them up with chili and homemade nacho cheese, and some other stuff to take your average nachos recipe to the NEXT LEVEL.
THE CHIPS
Now this can be a bit of a personal preference item. You have scoops, rounds, triangles…blue corn, white corn, yellow corn…loads of different brands. We used the standard white corn triangle for this recipe. Although the bite-sized rounds can be nice, the triangles seem to hold up better.

THE CHEESE SAUCE
You can use my 10 Minute Nacho Cheese Sauce recipe for this. If you’re in a pinch, you can use store-bought cheese sauce.
Please read my note about using shredded cheese in your sauce.
THE CHILI
We call these COWBOY NACHOS for a reason! The Texan flavors from this Easy Chili Recipe amp your nachos FOR SURE. My recipe is a one pot recipe that can be made in advance or even frozen for moments like this! BONUS: you get some added protein and fiber from the beans and beef!
THE TOPPINGS
Now I understand not everyone will love black olives or jalepenos. So if your crew is totally on board with everything in this recipe, simply put those ingredients in little dishes on the side for people to add if they like! Voila! Problem solved.
Now the reason we went tomatoes over salsa is to add a bite of freshness. Since you’ll already have the chili, the tomatoes, black olives and jalepenos really brighten the dish up (visually and in your mouth).

Ingredients
- 8 handfulls tortilla chips
- 1 cup
nacho cheese sauce (recipe) - 1/4 cup jalepenos seeded & diced
- 1/2 cup roma tomatoes diced
- 1/4 cup sour cream
- 1/2 cup
Chili (recipe here) - 1/4 cup black olives halved
- 1/2 cup shredded cheeses (I use cheddar/Monterey Jack blend)
Instructions
- Start with some nachos. Sprinkle some shredded cheese. Then drop spoonfulls of chili. Followed by a little nacho cheese, then tomatoes, jalepenos, sour cream, and black olives.
- Continue these steps until your out of ingredients! You can make one huge platter, or multiple individual plates. Yum!
Notes
For the most part this recipe is all assembly. The chili and nacho cheese sauce can be made ahead of time, or store-bought in a pinch. If you don't like jalepenos or black olives, simply omit!
