Paleo Protein Brownie Bites

These no-bake fruit-and-nut-based high protein brownie bites are so easy and convenient to make when you’re craving a sweet treat without all the guilt!

For protein powder I use clean, paleoThin egg white protein. A mix of cashews and walnuts give it that brownie batter vibe. You can use all dates, but I had some raisins so I used those too. I also added stevia extract to keep the sugar from skyrocketing. Finally,  I mix cacao and cocoa powder for a good antioxidant/flavor profile.

INGREDIENTS

  • 2/3 cup raw walnuts.
  • 1/3 cup dry roasted cashews.
  • 5 medjool dates pitted.
  • 1/4 cup raisins.
  • 1 scoop paleo egg white protein powder.
  • 1/8 tsp stevia extract.
  • 1/4 cup water.
  • 1/4 cup cocoa powder.
  • 1/4 cup cacao powder.
  • Pinch or two sea Salt.
  • 1/2 tsp Vanilla extract.

METHOD

  • Blend the nuts together in food processor until finely ground.
  • Add remaining ingredients and combine well.
  • Roll into small balls, dust with cocoa powder, and chill about 1 hour. Done!

NOTES

These taste so good! When they’re warm they taste like brownie batter, but I like them chilled the best! (plus you don't eat through the whole batch in one sitting if they're cold!)
