Instructions
  1. In large bowl, add 1 1/2 cups of warm water. Sprinkle in yeast and brown sugar, and let foam, about 5 minutes. Add salt and stir to dissolve.
  2. Add flour in batches, stirring with wooden spoon to incorporate. DO NOT BEAT! You don’t want to overwork the flour. Continue adding flour and begin to work with hands, until fully incorporated. (I recommend wearing gloves!) Knead until the dough is smooth and elastic, about 3-5 minutes depending on skill level.
  3. Shape dough into a ball, and placed in greased bowl. Cover with plastic wrap and let rise in warm place for 30 minutes. In a medium bowl, mix remaining water and baking soda until dissolved. Set aside.
  4. Once dough has doubled in size, it’s time to roll. Flour work surface, pinch off bits of dough about tennis ball size, and roll out using hands into a long rope. Use flour to keep from sticking to hands and work surface. Shape into a pretzel (see video) and gently dip into baking soda solution. Place on greased baking tray. Repeat with remaining dough. (You’ll need two baking sheets)
  5. Let rise another 15 minutes while preheating the oven to 450 degrees Fahrenheit. Bake for 10 minutes/until golden brown. Brush with melted butter and sprinkle with sea salt. Serve with mustard, cheese dip, or enjoy as is!
