Start your day off right with this modern twist on a traditional dish…

This breakfast sandwich takes only 5 minutes to make, but gets it’s flavor from beautiful ingredients instead of relying on grease like most breakfast sandwiches.  

Here’s what you’ll need:

  • English muffins (or any time of bread-based sandwich builder)
  • Eggs or egg whites
  • Turkey
  • Avocado
  • Salsa
  • Butter (optional)
  • Frank’s Red Hot (optional)
  • Provolone Cheese
  • Sea Salt and Black Pepper

Breakfast Sandwich: options

Now we like a lot of our food with a little kick, so our eggs get a little Frank’s Red Hot for extra flavor. You can totally omit it if you do not have it, or do not like it. Alternatively, if you prefer a different hot sauce, you can certainly substitute that. 
 

BREAD

For the bread component, we like English Muffins because they tend to hold everything together well….and the multigrain varieties are nice and complex in flavor. Bread/toast, roll, bagel, etc works well too!

 

EGGS

I prefer egg whites to limit my fat content, but my partner prefers whole eggs … so it’s really up to you. 

For whole eggs: I like to crack the eggs into the hot pan, then just sort of break the yolks right and fold them together before flipping them. 

To make life easier, if you use a smaller skillet, you can fry the eggs without having to fold them over or break them up to fit in the sandwich. 

This healthy breakfast sandwich is SOO much better than the grease-traps filled with bacon, butter, sausage, and loads of cheese…it satisfies without the guilt!

Turkey Egg Avocado Breakfast Sandwich

A yummy twist on the traditional Bacon Egg & Cheese that packs some serious nutrients and a flavor punch!

Equipment

Ingredients

  • 4 English Muffins (or bread preference)
  • 8 eggs or egg whites
  • 1 avocado
  • 4 slices turkey breast
  • 4 tbsp salsa
  • 4 slices provolone cheese
  • 1 tsp butter
  • salt and pepper (to taste)
  • Frank's Red Hot optional

Instructions

  • Toast your muffins. Lightly butter bottom if desired, and leave top half dry.
  • Heat your skillet to medium heat. Lightly spray with non-stick cooking spray. Fold your slices of turkey in half, and place on skillet to brown. Cook 45 seconds, flip, and cook another 45 seconds. Remove and set aside.
  • Re-grease/spray and add your eggs or egg whites. Scramble in pan (if desired). Once cooked, season with salt and pepper. (if you're adding Frank's hot sauce, add a couple drops right to the egg here). Remove and set aside.
  • Halve, remove pit, and slice avocado. I used about 1/4 per sandwich.
  • Build your Sandwiches! From bottom to top it goes: muffin, egg, turkey, provolone cheese, sliced avocado, salsa, muffin top. yum!

Notes

Using eggs or egg whites is completely preference. You can scramble the whole eggs ahead of time, in the pan, or cook as over-easy (those are just a little messier!)
This sandwich is delicious on any toast -- we just love them on multigrain English Muffins for an added health boost!
