Snow Ice Cream
This is so easy, it’s silly! It’s a great little treat that’s easy to make with kids, and really fun too!
You can use any milk you like. I prefer almond milk, so that’s what I used (and it’s dairy free)! But you can use regular dairy milk, or soy milk, coconut milk, hemp milk, oat milk…whatever you prefer!
The vanilla snow ice cream flavor is good all on it’s own! Or you can top with sprinkles or shaved chocolate. I had some PB2 powdered peanut butter on hand, so I used that to make a deliciously dreamy peanut butter snow ice cream recipe!
I also had some hot cocoa mix on hand, so I used that to make a chocolate snow ice cream recipe! You can use a store-bought package or mix, or used a homemade Hot Cocoa Recipe like I did! Just be sure to reduce the sugar you add to the milk if you’re using a Hot Cocoa mix because it’s already sweetened.
A NOTE ABOUT THE SNOW
It is perfectly safe to eat clean, white, untouched snow. When you’re scooping it up, be sure to choose snow that hasn’t been touched before. You don’t want the slushy stuff…it needs to be nice and fluffy to work. (Think shaved ice)
IS IT HEALTHY?
It honestly, really and truly is a perfectly acceptable healthy alternative to traditional ice cream and most all sweets. Yes, there’s a little bit of sugar in it. But for the amount you get to eat for all of 50 calories, you can’t beat it! Best part is, it is easily dairy-free or vegan-friendly!
INGREDIENTS
The "Base"
- 1 cup milk of your choice
- 3 tbsp granulated sugar
- 1 tsp vanilla extract
- 6-8 cups snow the clean, white, fluffy kind
- 1 pinch seat salt
Optional
- 1/4 cup powdered peanut butter I used PB2
- 1/4 cup hot cocoa mix store-bought or homemade
METHOD
- For SNOW ICE CREAM recipe: Whisk together milk of your choice (I used almond milk), sugar, salt, and vanilla.
- To make Chocolate Snow Ice Cream: Reduce sugar by half and add powdered hot cocoa mix!
- To make Peanut Butter Snow Ice Cream: Add powdered peanut butter to your base mix. (do not reduce sugar).
- Add snow! For one cup of milk, start with 4 cups of snow and mix together gently, as if folding in the now. Once the snow hits the liquid, it will start to melt! The more snow you add, the fluffier and lighter your snow ice cream will be.
- Enjoy immediately before it melts!
